Honey Scones with Orange Pollen Glaze

I am in the process of testing out recipes that use honey(because we plan on having a little with 2 hives!). This one came from The Beekeeper's Bible. I modified the recipe quite a bit, the original seemed more like a biscuit than a scone. The ones I made are not true scones, but are really tasty! I doubled the recipe in the book as well, to make a decent size batch. I ended up with about 24 scones, 2 inches around.

3 1/2 C. Flour
1/2 tsp. Salt
6 Tbs. Turbinado Sugar
1 Tsp. Baking soda

Mix dry ingredients together until well blended. Then add:

2 Eggs
6 Tbs. Dark Honey (I used Buckwheat)
1/2 C. Half and Half
8 Tbs. Butter

Mix until you have a firm dough that doesn't crumble. Don't over mix these, they won't be as airy.
Line a baking sheet with parchment paper. On a floured surface, roll out scones to about 1/4 inch thick and use a jar or biscuit cutter to cut 2 inch circles. To keep scones from getting tough, roll out about 1/4 of the dough. After you cut the scones out, add a little more fresh dough and re-roll.
Bake at 400 degrees for 8-10 minutes. Don't over bake, scones will not brown on top and should be barely brown on the bottom.

While scones are baking, pour 1/4 C. honey (I used a lighter clover honey) and 1/4 C. half and half in a small bowl. Add a light shake of cinnamon, a few drops of orange extract, and 1/2 tsp bee pollen. Beat vigorously to mix all ingredients together. Use a whisk or electric mixer.

Remove scones from oven and cool slightly. While they are still warm, spoon a little glaze over the top of each scone. Let cool completely. Share and let everyone envy your gourmet baking ability!

Baking tip: To pour honey more easily out of a measuring cup or spoon, coat the cup or spoon with a spray of oil. The honey will slide right out (which makes impatient bakers much happier)
